You are my Sunshine Sandwich

  1. Get count of how many sandwiches y’need to make

  2. Clear the rollycart and wipe down top with Sani water

  3. Gather the components: biscuits, butter, eggs, cheddar, plastic storage tubs

  4. Cut biscuits in half like a sane person would

  5. Spread each cut side with about a ½ tsp of butter each

  6. Cut slices of cheddar evenly into four smaller squares

  7. Each side of biscuit gets 3 squares of cheddar

  8. Plop an egg down on one side

  9. Close it up like a sandwich

  10. Place in plastic bin (6-per bin)

Notes

All the sandwiches are prepped egg + cheese only. When customers order, if they ask for sausage, we slide a round of pork or veggie sausage onto the sandwich before we heat it.

We keep a tubs o sausage patties in the fridge

Prepping Eggs 

  1. Put four egg rings on a fancy-oven-safe pan* 

  2. Into each ring, crack an egg 

  3. Sprinkle each egg with salt/pepper/paprika mix

  4. Put ‘em in the oven and select “Prep 4 eggs” 

  5. Yolks may be a tiny bit runny but that’s okay – it helps them not to be over-cooked when we heat the final sandwich

    *NEVER USE METAL IN THE TURBO CHEF OTHER THAN THESE PANS!  

Prepping Veggie Sausage 

  1. Put sheet of deli parchment paper down on a fancy-oven-safe pan 

  2. Lightly spray the paper with oil 

  3. Lay out single layer of veggie sausage rounds.   

  4. Put ‘em in the oven and select “Prep Veg Sausage” 

  5. Store in deli tub with label, name, date
